Cook Book Tuesday

Once again it's Cook Book Tuesday.
Tonight's yummy dinner is.....Drum roll please...
Turkey loaf.
The key to staying on track with eating well is planning ahead.
This is one of those meals that can carry over for lunch tomorrow
so why stop at a deli when you have all the goods waiting to be packed in a cooler?
The answer is the hard truth, it's plain down right lazy... Now I know that sounds harsh
and you're thinking what got into Leslie today? But even I'm guilty of the quick fix.

Now before you say anything, this isn't the
dried out meatloaf you may think it is.
Where's is the ketchup? Where's the tomato sauce? Where's the bread crumbs?
Not in this recipe, this will be the most tender meatloaf ever and it is "clean eats" along with
a lot of protein.

2 1/2 lbs. ground turkey
4 egg whites
1/2 cup chopped celery
1 small onion
3 gloves garlic
1/4 cup dried basil
1/4 cup ground flax seed
Sea salt and pepper to taste

Preheat oven to 375*
Place ground turkey in a large mixing bowl and add all ingredients,
I like to scramble up my egg whites first then pour them in (it's just me).
Mix it all together well, then place it into a loaf pan, and bake it for 1 hr or until
your meat thermometer reads 160*
Remove and let stand for 15 Min's. Why? so when you cut it you get slices, cut to early and you get
a pile of ground turkey, that's how tender this is.

Serve this with a side dish of fresh spinach, sauteed in garlic and olive oil
along with 1/2 of a SMALL sweet potato.

You can stretch this meal so many ways, breakfast in the morning because WE DON'T SKIP THE MOST IMPORTANT MEAL OF THE DAY..! Whip up some egg whites for an omelet, chop some peppers along with a 1/2 slice turkey loaf, place all into a skillet and poof..BREAKFAST..You need this meal on the go, throw it into a WWW ( whole wheat wrap) and out the door you go with a great start to the day.

Start today for a healthy tomorrow..
